Lactase (also known as β-galactosidase) is an enzyme deputed to digestion of lactose, the typical sugar of milk and of other dairy products, into the two constituting units: glucose + galactose. Supplementation of lactase, generally produced from bio-fermentation from fungi of the Aspergillus genus, is helpful for those people who have an impaired (or lost) endogenous lactase activity; this condition (hypolactasia) is quite common in adulthood, leading to lactose intolerance.
